The Bacon Production Process
The process begins with large pork belly pieces being placed in a large tumbler to soften and remove skin. After slicing the skin, the pieces are inspected on a conveyor belt, ensuring they are free from excess skin.
Next, the slicing process moves to the curing stage, where salt, water, liquid smoke, and other flavorings are mixed to create a curing solution. This solution is injected into the pork belly slices using needles, ensuring the flavours penetrate thoroughly.
