Sprout & Co Expands with New Cafe in Cork City

The Cork City Council has granted Sprout & Co permission to open a new café, subject to a range of stipulations aimed at minimizing negative impacts on the local environment and promoting responsible business practices.

Operational Hours for the Street Café

In line with the council’s conditions, Sprout & Co will restrict its public food service hours to between 11 am and 9 pm, Monday through Saturday. This restriction aligns with the council’s aim to safeguard the vitality of the area’s streetscape during less busy times.

Proposed Café Layout Design

The proposed café design caters to both dine-in and take-out patrons. On the ground floor, patrons can find an enclosed kitchen, four window tables, and some complimentary seating. This space will also contain a prep and serve area to ensure efficiency.

The first floor will feature a more expansive dining area, including seven dining tables and additional seating. This level will also house a prep kitchen, a cold room for preserving food, a store room for inventory, and essential facilities like staff changing rooms and toilets.

Interestingly, the second floor will remain untouched, indicating a cautious approach to not over-develop the space and respect the existing building architecture.

City Planning Considerations

The chosen site is classified as part of a ‘secondary retail frontage,’ with zoning objectives focused on keeping residential uses, retail offices, general offices, hot food takeaways, and betting shops out of ground-level spaces. This zoning designation is aimed at preserving the area’s character and功能.

Due to these designations, city planners required Sprout & Co to provide additional information. The core concern was confirming that the proposed business wasn’t classifiable as a hot food takeaway, which could fall outside the zoning objectives for the area.

Acceptance of the Application

One Cork City planner reviewed the proposal and found it acceptable. The conclusion was based on the applicant’s confirmation that they would not be operating as a hot food takeaway. Instead, they’d be serving a sit-down menu alongside a lunch collection option featuring salad-based dishes, aligning with the café’s reputation for healthy eating.

Moving Beyond Dublin: Sprout & Co’s Expansion
