- 1 Tbsp.red curry paste
- 1 Tbsp. light brown sugar
- 1 Tbsp. fresh lime juice, plus grated zest for serving
- 1 Tbsp. fish sauce
- 1 3-pound cauliflower, cut into 1/2-inch-thick steaks
- Olive oil, for brushing
- 1/4 cup unsalted roasted peanuts, chopped
- 1/4 cup cilantro leaves
Instructions
- Heat grill or large grill pan on medium. In medium bowl, whisk together coconut milk, peanut butter, curry paste, sugar, lime juice, and fish sauce.
- Brush cauliflower with oil. Grill, covered, until grill marks form, 5 to 7 minutes. Flip and grill, basting with 1/2 cup peanut sauce, until just tender, 6 to 8 minutes
- Arrange on platter and sprinkle with peanuts, cilantro, and lime zest. Serve with remaining sauce.
