Ms. Barona’s cuisine is not approximate. The native of the country of Pancho Villa and Frida Kahlo has laid a menu merging the kitchens of her Mexican homeland and Quebec, colored with her personal touch. All served in the District Gourmet food fair, on the ground floor of the Sainte-Foy HQ, in Quebec.
“We were approached to bring a Latin side to the place of the place. Fusion, invention and variations in recipes known to combine Quebec and Mexico, such as an apple pie in the Churros way, ”she shares.
If the name of Carolina Barona rings a bell in the spirit of gourmets, it is because she is the chef and co-founder of Tequila Lounge, in the Saint-Roch district, in Quebec. With her spouse and business partner Ariane Robitaille, she has been carrying out the destinies of this Mexican restaurant for a decade. Without forgetting their catering and home chief services, the food truck From tequila lounge and – more importantly – a new baby, a little girl named Romina.
“We have been mothers for a year!” I wore the baby and worked up to 38 weeks of pregnancy, says Robitaille. It is our biggest life project, but we are not about to stop our professional projects. We continue to move forward! “

Let’s go back to the menu of about fifteen dishes for supper, which can be viewed from the large common dining room of the gourmet district or from the counter which gives on the open kitchen of the Sazón:
- As a starter, there is in particular a heat shrimps (homemade broth soup), nachos, ALITES (wings) chicken and cheese fondues with lobster (the favorites of the Xavier Joanis Sous-chef).
- As a main dish, pork, shrimp or toasted cheese tacos, toasted At tuna tartare as well as ribs accompanied by toasted corn, among others.
- In the dessert, we finish with the churro with apple and cinnamon sauce or a pumpkin cake and fall spices.
In short, this new Sazón is intended to be an additional playground for the couple of new mothers and women of experiences. “Caro has a lot of fun here!” It is for her a different opportunity to teach her culture, says Robitaille. The pleasure of working on a small scale – to put a lot of energy on a small map rather than large by using local and fresh ingredients according to the seasons – also makes all the difference. ”

In addition, the Tequila Lounge reopened its doors after the piping breakage which had allowed to escape from the water soiled on the ceiling of its premises on rue Saint-Joseph Est.
