Barely opened, already filled, already alive; The Uproar brings all of Toulouse to the table. A neighborhood bistroa haven for bon vivants, designed to last from the first coffee to the last drink. Here, people drink glasses, eat and celebrate.
A bistro Place des Carmes
A place where you enter early… and leave late. This is the idea germinated by Alexandre and Oscar, the two partners behind this bistro promoting good eating and drinking. They opened last October Le Vacarmes, opposite the neighborhood marketwhich they claim as a real place to live. A place that they have imagined for a long time, while both were still working for other Toulouse houses. Passed by historical addresses of St. Peter’s Square and other city institutions (La Couleur de la Culotte, Chez Tonton, Bistrot 12, Les Tilleuls), they cut their teeth there.
“We knew we wanted to get started, but not too early. We needed experience.”
So, when it was time to find the place that would bring this new adventure to life, they visited, hesitantly, until this location, Place des Carmes. “We fell in love straight away. We wanted to be right in the center, in a place that has a soul. A place of passage, alive from morning to evening”says Alexandre. The neighborhood ticks all the boxes : historic, vibrant and lively, from dawn to dusk.

From stall to plate
The Uproar opens your terrace at 9 p.mto coffees in a hurry as well as to strollers who prefer to sip. But as soon as noon strikes, the tables are set up and the time has come to discover the formula at €23 starter-main course-dessert of the moment. The products are fresh, the cuisine generous, the menu short and seasonal. It is Arnaud who imagines market menus, precise and comfortingwhich awaken nostalgia for the bistros of yesteryear.

Onion soup gratinated with marrow bone and matured Comté cheese, served in large lion’s head bowls; œufs may with pesto-style basil, parmesan and pine nuts; duck confit ravioli topped with a strong clementine juice, soy sauce and candied egg yolk; line-caught bluefin tuna lime, soy and sake glaze, accompanied by candied sweet potato and turmeric mayonnaise; or even a vegetarian satay worked with the same passion. For dessert, cheeses of the moment or butternut egg cream and flaked almonds. The slate is wiped clean every week to make way for new titles, always just as tempting.

Arnaud works directly with market producers des Carmes, just opposite. Julie’s for the early part, Two Chavannes for cheeses, Boucherie des Copainsthe Fishmonger Sea bream…He appropriates a French cuisine, with a penchant for Asian touches. The product remains in the center, worked in its entirety.

For the evening, he imagines plates to share : salmon gravlax, tataki-style duck breast, Korean BBQ chicken skewers, mimosa egg, cheese plate… Dishes designed for snacking, toasting, chatting, prolonging the evening. We come to eat and drink carefully selected vintages, by Oscar.

Noise in the glasses
On the cellar side, The Uproar also makes noise. Oscar builds there a lively menu, filled with tastings and favorite bottles. A lot of biodynamica few natures, “We like to have a substantial menu, so that everyone finds what they are looking for. And above all, that it evolves all year round.” A cellar in the image of place, living to the rhythm of its passages, its orders, its famous “customers of the month”, and its evenings. Once a month, Le Vacarmes pushes the tables and invite a DJ : an anticipated, rare and precious meeting, which we savor all the more when it arrives.
