Simple Sponge Cake Recipe
This recipe uses a method of beating whole eggs, resulting in a very soft and fluffy cake.
Required materials(Ingredients)
Low-gluten flour: 140 grams (g)
Granulated sugar: 100 grams (g)
Eggs: 4 (large, room temperature)
Milk (Milk): 30 grams (g)
Vegetable oil or Corn oil: 30 grams (g)

Preparation:
Preheat the oven to 180°C (350°F).
Grease the bottom and sides of the baking pan or line it with parchment paper to make it easier to unmold.
Whip the whole eggs:
Crack the eggs into a large, clean, oil-free, water-free stainless steel bowl.
Add the caster sugar in three batches and beat with an electric mixer at high speed.
Continue beating until the egg batter becomes fluffy and white in color. Lift the whisk and the traces of dripping egg batter will not disappear immediately (ribbon-like flow back).
Fold in the flour:
Sift the low-gluten flour into the egg batter in two batches.
Use a spatula to gently mix the flour and egg batter evenly using the “cutting and stirring” and “turning” techniques. Use gentle techniques to avoid defoaming.
Emulsify the oil and milk:
Combine milk and vegetable oil in a small bowl.
Scoop a little egg batter from the large egg batter basin, add it to the milk and oil mixture, and mix quickly to reduce the density difference (emulsification).
Final mix:
Pour the emulsified cream mixture back into the remaining large egg batter basin.
Continue to use gentle “cutting and stirring” techniques to completely mix all the ingredients until no flour particles are visible.
Baking:
Pour the cake batter into the prepared pan and give it a few taps to remove any large air bubbles.
Place in the preheated oven and bake for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cooling:
Take it out immediately after baking and place upside down on a cooling rack to cool naturally.
Once completely cooled, remove from mold and cut into pieces to enjoy.
