Among the November vegetables, beetroot is not always popular. Too sweet, too earthy, too “canteen”… it carries an unfair reputation. How much to consume to enjoy it without excess?
As with everything, moderation is required. The ideal is to include 100 to 150 g per day, i.e. a small cooked or raw beet grated in a salad.
This is enough to benefit from its benefits without excessively increasing natural sugar intake. We like it raw for its intact vitamins, steamed for its digestible side, or in pink hummus to change habits.
We avoid industrial versions that are too sweet or vinegary and we favor fresh or sous-vide without addition.
