Here are 4 incredible easy vegetarian recipes that you can prepare for these national holidays and that will leave more than one delighted with its flavor.
Ingredients: 2 cups of gluten flour, 3 tablespoons of breadcrumbs or panko, 1/2 teaspoon of salt, 1 tablespoon of onion powder, 1 tablespoon of garlic powder, 1 pinch of ground pepper, 1/2 cup of non-powdered flour of baking, 6 tablespoons of colored chili pepper or 3 tablespoons of hot pepper, 4 tablespoons of cooked rice, 2 tablespoons of oil, 1/2 to 3/4 cup of soy sauce (depending on how salty the sauce).
preparation: In a large bowl you will add the dry ingredients mentioned above and mix everything, then you will leave a space in the center and place the liquid ingredients (2 tablespoons of oil and the amount of soy that you consider estimated).
You should start to put all the ingredients together with your hands and add water little by little to form a compact dough. When the dough is ready, separate it into small pieces and begin to form the dough in the same way as a traditional chorizo, and then wrap it in plastic wrap (three turns will be fine).
Subsequently, you must pass your hands over the dough to have the same thickness throughout the length. Then, tie the edges and the center with a thread or yarn so that they are a better size. Prick the chorizo several times to let it breathe and cook it in boiling water (the water should cover it) for 40 minutes.
After the cooking time, pour them over a colander to cool and release all the water. Once cool, remove the plastic wrap carefully and they are ready to be cooked in the way that best suits you, be it in the pan, oven or grill!
Ingredients: 2 potatoes, 2 corn, 2 or 3 bell peppers (the color of your choice), 1 onion, 2 Italian squash and 6 mushrooms.
preparation: You will start by slicing the corn, just like the potatoes. And if you like, you can cook them in boiling water for a few minutes to make them roast faster. On the other hand, you must chop the paprika, the onion in thick pieces and the Italian squash should also be cut into slices.
To season the vegetables, you can toss them all (including the mushroom) into a large bowl with a little white wine, garlic, sweet mustard, colored chili, a little soy sauce, and nutritional yeast. In case you don’t like wine, you can dress it with the seasonings on top only.
After letting them taste for a few minutes, you can start to assemble your vegetable skewers in the order you want to finally when the grill is hot, place your preparation on top and after a few minutes sprinkle a little salt to finish the preparation.
Roasted paprika hummus:
Ingredients: 1 red bell pepper, 2 cups of soaked chickpeas, 1/2 cup of parsley, 4 cloves of garlic, 1 tablespoon of paprika or colored chili, 1 tablespoon of BBQ sauce.
preparation: You will start by roasting the paprika, then remove the seeds and peel it, then you will take everything to the processor, where you will put the chickpeas, parsley, baked garlic, colored chili, BBQ sauce, oil and salt. Finally, you will grind it until it takes the consistency of a paste.
This preparation can be enjoyed with vegetable sticks or as a spread on bread.
Ingredients: 1 red bell pepper, 1 green bell pepper, 1 onion, coconut oil, soy sauce, oregano, 2 cups of textured soy, tomato sauce (optional), olives, and empanada batter.
preparation: You will start by soaking the 3 cups of textured soy in a bowl with 5 cups of water and a little soy sauce.
