Swordfish salad with lentils: a recipe by Giusina Battaglia

Here is the list of ingredients for the preparation of this salad: 500 g Ustica lentils, 200 g datterino tomatoes, 2 slices of swordfish, 50 g capers, 50 g olives, 2 Ustica onions, chives, mint, basil, extra virgin olive oil, salt and pepper

The recipe is really very easy. We cook the lentils in boiling salted water for 20-25 minutes. Cut the swordfish into cubes and sauté it in a pan with a drizzle of extra virgin olive oil, salt and pepper. When it is well browned, we keep aside.

Cut the pitted olives, capers and raw onions into small pieces. We can also use other ingredients if we do not like capers which are typical of Sicilian cuisine, therefore essential to have the right sprint!

In a large serving dish, put the boiled lentils, the diced swordfish, the chopped capers, olives and onion, the finely chopped herbs. We mix and serve, we can also complete with some nice fresh basil leaves if we like and our swordfish salad is served. How about this recipe? It looks really perfect for the summer!
