TORONTO – From the pages of Corriere Canadese, Teresina’s cuisine: here are the mpacchiuse Potatoes.
Ingredients for 4 people:
– 800 g of potatoes
– 2 Tropea onions
– extra virgin olive oil
Preparation: Peel the potatoes and cut them into slices of a few millimeters. Peel the Tropea onions and cut them into thin slices. Put 5 tablespoons of extra virgin olive oil in a large non-stick pan and heat them then cook the sliced potatoes for about 5 minutes over a fairly high heat. Add the sliced Tropea onions and cover with the lid, continuing to cook for another 15 minutes over low heat. Remove the lid, lightly salt and mix the packaged potatoes very gently so that the potatoes do not break excessively. Serve the packaged potatoes piping hot.
Variants and tips: To prepare mpacchiuse potatoes, it is better to use Sila potatoes or alternatively yellow potatoes. If you want you can add pepper. If you like them you can add smoked bacon or porcini mushrooms.
