This recipe of Thai origin is a delight. It is a good option as a dessert and also for a snack, for example. It is a healthy dish with a great taste and very easy to prepare.
8 small bananas
500 ml coconut drink
500 ml of coconut milk
3 tablespoons of panela
1 cinnamon stick
4-5 mint leaves
1 tablespoon unsalted roasted peanuts
1 tablespoon of cinnamon
We put the coconut drink in a casserole along with the panela, mint and cinnamon. Cook over medium-high heat and when it starts to boil add the coconut milk and bananas cut in half lengthwise. Cook over medium-low heat for 20 min, stirring from time to time.
We serve it hot or cold, sprinkling the chopped dried fruit and cinnamon to taste.
