poke bowl with spicy Gorgonzola Dop, edamame, marinated salmon, radishes and sprouts

With the arrival of summer, there is an increasing desire to eat fresh and delicious dishes, also suitable for children or for picnics in the open air. Here is the recipe for a single dish based on marinated salmon and spicy Gorgonzola Dop.

Ingredients for 4 people

  • 320 gr of sushi rice
  • 1 and a half teaspoons of rice vinegar
  • 250 gr of spicy Gorgonzola Dop
  • 250 gr of edamame
  • 4 radishes
  • 200 grams of salmon already blast chilled
  • sprouts
  • the green part of 1 spring onion
  • soy sauce
  • 1 teaspoon of honey
  • white sesame
  • 1 fresh chilli
  • salt and pepper

Preparation

Start with the preparation of the rice. Rinse the rice under running water until the water that comes out is transparent. Transfer it to a saucepan and cover it with the same amount of cold water. Cook for about 12 minutes without ever opening the lid. Remove from the heat, pour in the previously heated vinegar with a pinch of salt and mix with a wooden spoon.
In a bowl, marinate the diced salmon with 3 tablespoons of soy sauce, 1 teaspoon of honey, chopped fresh chilli, chopped spring onion, sesame and ground pepper.

Start composing the poke bowl: lay the rice in a bowl and flatten it slightly, arrange the diced Spicy Gorgonzola on top, the other ingredients, keeping them separate, and season everything with a drizzle of soy sauce.
