A Tapas recipe for a perfect Spanish holiday feeling to make on your Monolith. With this recipe revised by our grill master and Chef Ambassador Marco Greulich, you can bring the Spanish Riviera straight to your home, with even a little bit of Italy in it.
Pimientos (peppers) de Padron with sea salt and roasted bacon are a very popular tapas recipe throughout Spain. Delicate, sometimes spicy peppers become very aromatic when roasted in bacon fat. Delightfully fragrant and crunchy garlic, bacon and fine parmesan give this tapas an extra boost!
Ingredients for 2 people
- 200 g Padron Spanish green peppers
- 100 g of bacon
- 1 clove of garlic, coarsely chopped
- 30 g of Parmesan in flakes or roughly chopped
- A little Fleur de Sel or other good coarse sea salt
Heat a plancha or cast iron skillet over medium, direct heat and roast the bacon. When it is crunchy, place it on absorbent kitchen paper and let it cool. Once the bacon is cold, it can be cut into small flakes with a knife or fingers.
Then roast the Padron peppers in the bacon fat along with the garlic, stirring occasionally and salting lightly. Once the desired roasting is achieved, place the peppers and garlic in a bowl, sprinkle with Fleur de sel and mix well. Arrange on a serving dish and sprinkle with the bacon and Parmesan cheese.
The pancetta must be very fine, aromatic, rolled and seasoned from Italy. A little good balsamic vinegar sprinkled on the peppers when serving adds another dimension of flavor.
