Today we bring to the table a simple and very tasty recipe; have you ever prepared shortcrust pastry in a savory version? It is an excellent alternative to brisé or the puff pastry you buy. Preparing it is not difficult at all indeed, very versatile and quick.

For a different dinner than usual I thought I’d prepare a nice one savory tart filled with: cottage cheese, onions and potatoes. An almost perfect combination, but absolutely modifiable. In fact, depending on your tastes, it can be reinvented and modified. For example, you can opt for the addition of cooked ham or, completely change it.

The most important thing is to be able to prepare an excellent one shortcrust pastry. For example, I decided to flavor it with rosemary but, again depending on your preferences, you can decide to omit it.

The dough is absolutely not difficult but, on the contrary, very practical! There is no need for instant yeast (as is believed), but only with very few ingredients: awater, flour, butter or oil, salt or Parmesan and rosemary.

It is a dish that should be served cold and that can also be prepared for a different aperitif than usual. It is no coincidence that it can easily be placed in the category “appetizers”; However, for the preparation of the filling I relied on the beautiful knives Friedr.Dick from the Pink Spirit series. Thanks to these I was able to chop and peel potatoes and onions in a very short time.

Used material:

  • Spelucchino: with a slat 9cm long and a round handle – typically Asian-. Perfect for cut and peel small foods such as potatoes and onions.
  • Santoku: alveolar blade with a length of 18cm; suitable for cutting various types of vegetables or chopping them. In addition, in addition to being also pink, it has a round handle.

INGREDIENTS

  • FOR THE SALTED SHORTBREAD:
  • 320g of “00” flour
  • 200g of cold butter
  • 2 eggs
  • Half a glass of water at room temperature
  • 40g of grated Parmesan or salt
  • Rosmarino q.b.
  • STUFFED:
  • 300g of ricotta
  • 2 large onions
  • 3 large potatoes
  • Rosemary for decoration
  • 50g of grated Parmesan
  • 2 eggs
  • Pepper as needed

INSTRUCTIONS

First, start by cutting and peeling potatoes and onions. Once made into small cubes, leave them aside (in firgo or in a bowl with water).

Now dedicate yourself to the preparation of the savory shortcrust pastry: in a bowl, mix the butter with 280g of flour and then add the salt. Continue to mix adding (gradually): eggs, rosemary, water and more flour.

Knead until you get a compact and not sticky dough. Once done let it rest in the fridge for at least 1 hour.

Prepare the filling: ricotta, eggs, parmesan, pepper, onions and potatoes.

After the necessary time, roll out the pastry and return it to a mold greased and floured or, with parchment paper. Prick the base and stuff; Bake the tart at 170 ° for at least 40 minutes and serve cold.

If you like, decorate the surface with other finely chopped potatoes and rosemary.

With the leftovers of the shortcrust pastry, prepare a stuffed variant for the little ones.
