Spring arrives, our desire for lightness is felt. On the plate, we want color, freshness and healthy products. We then give pride of place to vegetables and in particular to one of the stars of the season, which is green asparagus. We love this delicious recipe that can be enjoyed as a starter or as an accompaniment to meat, poultry or even fish.
- A few green asparagus
- Olive oil
- A lemon
- Salt pepper
- Cut the base of the asparagus then rinse them with clean water. In a large saucepan, bring water to a boil. Salt then plunge the asparagus in boiling water. Cook them for 3 or 4 minutes depending on their thickness.
- Once cooked, drain them then run them under cold water so that they keep their beautiful green color.
- In a pan, heat a little olive oil. Add the asparagus and grill them for 1 or 2 minutes on both sides.
- Remove them from the heat and place them on a plate. Season with salt and pepper, add a few drops of olive oil and a dash of lemon juice. Finally, sprinkle with grated Parmesan just before serving. Enjoy your meal !
