Easy Spanish recipe for your summer aperitifs: croquetas de jamón

Summer is often associated with meetings with friends, reunions and aperitifs. In Spain, this kind of event is usually accompanied by a good sangria, the famous Gazpacho, which I gave you the recipe here, and tapas. And within these famous little appetizer bites, the croquettes are an element of choice, one of the symbols of Spanish gastronomy. Today, I am sharing with you all the secrets of the recipe for my croquetas de jamón.

But where does this delicious treat come from?

It is quite difficult to determine the exact origin. It seems the Romans were already eating it. And believe it or not, the current recipe is… French!

Indeed, it was the French chef Antonin Carême, also nicknamed “the king of chefs and the chef of kings”, who served these bites to the nobles for the first time during one of his banquets between the middle of the 18th century and the beginning of the 19th century. Moreover, the name also comes from French. Etymologically, the word comes from the French word ” bite “, And its diminutive” croquette ».

Even if it is this cook who popularized the ” croquettes », This dish was born at a time when necessity prevailed. We lacked a lot of things, but on the other hand flour was plentiful. The croquettes were therefore an ideal dish, because it allowed to make a tasty and inexpensive food, while reusing leftover meat, cooked dishes or stews.

This explains the popularity of this recipe, which quickly became a staple of Spanish gastronomy.. Today this dish is so integrated into Spanish cuisine that it can be tasted as well as an aperitif, main course or side dish.

However, there are many who continue to opt for croquettes more traditional. As far as I’m concerned, my favorites are undoubtedly the Ham croquette.   1. Empezar haciendo una buena bechamel. Rehogar la harina tamizada (pasada por un colador) en el aceite.- Start by making a good béchamel sauce. Brown the sifted flour (passed through a sieve) in the oil.
  2. Poco a poco, incorporarla leche templada o del tiempo (pero no fría, para no hacer grumos). hasta conseguir la textura deseada (se pueden modificar ligeramente las proporciones de los ingredientes).
