Recipes Detto Fatto, the pea soup with raspberries
Ingrediants: 250 g of peas, 1 carrot, 1 celery stick, 1 medium potato, 1 leek, 1 tablespoon of flaked almonds, 4 cherry tomatoes, salt to taste, fresh parsley to taste, 2 tablespoons of olive oil and 80 g of raspberries
Preparation: let’s start with the vegetable broth we make with 400 ml of water, peeled vegetables and cut into large pieces, salt and boil for about 30 minutes.
Pour the frozen peas into a saucepan with boiling salted water, cook for 5 minutes and then drain. In a pan with high sides, on the other hand, let the bank part of the leek cut into very thin slices dry with a little olive oil. Here we add the diced potato and cook by adding the vegetable broth a little at a time. After a few minutes we also add the peas that we have already boiled quickly and drained. Add a glass of broth and cook with the lid on for about 30 minutes. Only at the end of cooking we add some chopped fresh parsley, then we pass it all in the vegetable mill. We serve the pea soup, completing if you want with slices of almonds, fresh raspberries and maybe even some fresh parsley.
